As we know, we are  not a fan of dairy products, many of which contain saturated fat, which is bad for our cardiovascular system. Of course skim milk can be okay, although I think it is rather tasteless, which is why I suggest substituting regular milk with vegetable milk.

A vegetable milk is a drink based on vegetarian ingredients: milk from soy, almonds, rice, oats, hazelnuts, or coconut (be sure to choose coconut milk that is non-fat). Vegetable milk is an alternative way of adding a tasty liquid to your cereal, or to any sort of recipe, without having to resort to cow’s milk. It also allows those who are lactose or milk protein intolerant to still enjoy their food.

These milks are rich in plant proteins and bring healthy fat (except for coconut milk which is high in saturated fat), which are essential for our bodies. And the good news is, you can make all these milks yourself! In fact, homemade is even better than store-bought.

Generally speaking, when cooking, soy milk can usually be substituted for dairy milk in just about every recipe as it’s similar to cow’s milk with regards to fat and protein content – while almond or rice milk is best used when making desserts as they are both naturally sweet. All of these various plant-based milks are available in flavored and sweetened versions, and often come fortified with nutrients like B vitamins and calcium.
Plant-Based Milk Uncovered
Almond milk, with its delicious aroma and creamy consistency, is rich and protein and perfect in desserts. In Sicilian cuisine, almond milk is a key ingredient and the sweetened version is the basis for the delicious and refreshing granita di mandorleCoconut milk, derived from the blended pulp of the fruit mixed with its own water, is very rich in natural fats: it’s used to make the Pina Colada cocktail as well as an ingredient in many savory Asian dishes like curry. Hemp milk doesn’t contain any psychoactive substances, but is rich in Omega 3 and Omega 6 and is both rich in protein and easily digestible. Oat milk maintains many of the health properties of the plant: it’s rich in protein and helps the immune system. It’s also great for making you hair and skin shine.
The lightest and most digestible kind of plant-based milks is rice milk. It’s perfect for those who have food allergies but is also virtually fat and protein-free, which makes it rather unsuitable for cooking, as it adds no creaminess to dishes. Rice milk has a very delicate taste, which makes it a refreshing drink or a suitable accompaniment for breakfast cereals.
Commonly used and widely distributed, soy milk can be found in infinite variations and comes in flavors like chocolate, banana, pumpkin, barley and even caramel. It is often enriched with vitamins, calcium and magnesium, and its flavor often varies according to the manufacturer. It’s best to choose milk made from organic soybeans so you are sure they’ve been grown without the use of pesticides and haven’t been genetically modified.
It’s even possible to make your own plant-based milks at home: all you need is a bit of time and the desire to experiment.

Here is a recipe for fresh almond milk

*Note that “fresh almonds” is the official term for dried almonds (ie. not roasted or salted; the plain version that is used for baking).

Ingredients:

·                1 handful of fresh almonds soaked in water overnight.
·                1 teaspoon vanilla extract (or less, if you prefer a less distinct vanilla taste)
·                2 tablespoon agave nectar (from the agave Cactus) or organic honey


Directions:


·                Rinse and drain the almonds. Put in the blender with 2/3 times their volume of water (or according to your taste)
·                Blend until the liquid turns white and milky
·                Filter the milk through very fine filter paper in order to eliminate pulp
·                Discard the pulp (I personally keep the pulp to make raw snack bars, but that’s another story)
·                Drink immediately to benefit from all the vitamins!
·                You can also add fruit; strawberries go really well with almond milk
         

Milk Vegetable Soup



Ingredients


1 1/2 cups mixed vegetables
1 chopped onion
2 tbsp butter
3 cups milk
1 1/2 tbsp plain flour (maida)

Method
1.     Heat the butter and fry the onion for 1 minute.
2.     Add the vegetables and fry again for 2 to 3 minutes.
3.     Add 1 teacup of water and cook until the vegetables are soft.
4.     Mix the flour and milk, heat for a little while and add to the vegetables.
5.     Serve hot.
